We Say: Electrically tart, astonishly pale organic/biodynamic pink wine from Wales. Wild strawberries, sharp redcurrants, with a gentle soothing minerality. At 10% it's pretty great as an afternoon aperitif.

Producer Says: Final 10/15% out of the press from Blanc de Noirs production, on skins for 4-6 hours. Fermentation in stainless steel and concrete egg, aged on gross lees for 6 months minimum. Natural MLF, no filtration, no fining, may receive a small addition of SO2 at bottling.

Region: Monmouthshire, Wales

Grape: Pinot Noir, Chardonnay

Notes: Organic fertilization, minimal intervention.
